Good winter food...

Hutspot, also known as carrot stew is a typical Dutch dish. I like a good stew. They are quickly ready, healthy, easy to make, comfort food satisfactory and you can freeze in any leftovers. Good winter food this vegan carrot and mash stew!

Stews are incredibly easy to veganize. Simply add unsweetened soy milk instead of cow milk. So honest, super creamy and without animal pregnancy hormones.


Serves 4

Ingredients:

  • 1.5 kilos of flowery potatoes (potatoes you can mash very easily)

  • 500 grams of carrots

  • 3 shallots

  • 1 red onion

  • unsweetened soy milk

  • salt / pepper

optional:


  1. Wash the potatoes and the carrots. I never peel potatoes because I believe that you then peel away all vitamins but the choice is yours. Cut the potatoes and carrots in half and cook them for 20 minutes in a pan in plenty of water. Drain off.

  2. Peel and chop the shallots and the red onion. Fry it over low heat until they are nice and soft.
  3. Add the onions to the potatoes and carrots. Mash and add unsweetened soy milk until it has a nice creamy mash structure. Add salt / pepper to taste.
