The ideal salad when people come over for diner!

I often make this vegan carrot salad when I have people coming over for diner or when I know I don't have a lot of time to cook the next day. What I really like about this salad is that you can make it in advance and that it even tastes better after a few hours in the fridge!

An all time favorite!

I love making this salad in the holiday season but it is also very refreshing in the summer. It is great in combination with my recipe for Beyond Meat Wellington! Or one of my other Wellington recipes on my blog :-)), but you can also just wack it on a vegan burger!

Serves 2


  • 200 grams of carrots

  • ¼ green apple

  • ½ stalk of celery

  • 1 shallot

  • 1 large clove of garlic

  • 2 tbs vegan soy yogurt

  • 2 tbs vegan mayonnaise

  • 1 tsp curry powder (or more to taste)

  • salt / pepper

  • handful of raisins

Make the sauce:

In a large bowl mix the yogurt, mayonnaise, curry powder and salt / pepper to taste. Squeeze the garlic in and add the raisins. Mix everything together.

For the salad:

Grate the carrots by hand or in a food processor. (I often do this by hand. Having a mindfulness moment haha).

Shred the shallot very finely, cut the celery into little pieces and do the same with the apple.

Now add everything to the sauce and mix well. Leave this for a couple of hours in the fridge so all the flavors can absorb.
