Vegan toad in the hole..

I share my great love for British food with you again! It is really comfort food, so in my opinion that means that it fills well and they are often not the most expensive dishes to make. I think it is great fun to veganize British pub dishes as you know. So does this vegan toad in the hole ..

Toad in the hole is a British dish that consists of sausages baked in Yorkshire pudding. It is a cheap dish that originated around the 18th century as a leftover meal with various types of meat.

In this vegan toad in the hole recipe I use the Incredible bratwurst from Garden Gourmet. But I think you can use any vegan sausages really!


Serves 2

Ingredients:

 

For the batter:

 

  • 250 grams of self-raising flour

  • 2 tsp baking powder

  • 1 tsp salt

  • 500 ml unsweetened soy milk (or enough to make a kind of pancake batter consistence)


  1. Preheat the oven to 220ºC / 390ºF.
  2. Put the onion, mushrooms, Brussels sprouts and sausages in a baking dish. Add 2 tbsp sunflower oil. Mix everything together and put the dish in the oven. Cook for about 10 to 15 minutes.
  3. Put the ingredients for the batter in a bowl and mix everything well with a whisk. (It should be a bit the same consistency as pancake batter).
  4. Add salt and pepper and some finely chopped rosemary to taste.
  5. Remove the baking dish from the oven. Pour the batter over the sausages and vegetables and quickly put the dish back in the oven.
  6. Bake in the oven for about 25 minutes. Do not remove the baking dish during this time, otherwise the batter will not rise.
  7. Serve with some extra Brussels sprouts or other vegetables such as cabbage.
