Need some inspiration for a cosy vegan high tea, lunch or a colorful addition to your snackboard? Why don't you try these indulging feel good vegan springrolls filled with the products from Vegafit and a color pallet of vegetables. I know for sure you can not stop yourself once you tuck in and you shouldn't because they are also very healthy!
8/10 rice paper
3 vegan vissticks (vegan fishfingers) (Vegafit)
1 vegan gehaktschijf (vegan meatball) (Vegafit)
handful glass noodles
red and yellow paprika
1 large avocado
handful shii-take mushrooms
salt / pepper
rice vinegar or lemon
optional: some sprouts
for serving: chili sauce!
Prepare the noodles (follow packet instructions).
Cut the paprika and the cucumber in thin strips. Chop the coriander. Mash the avocado and add some salt / pepper and a splash of rice vinegar or juice of a lemon.
Bake the vegan fish fingers and the vegan meatball (follow packet instructions). Let them cool down and cut into strips.
Bake the shii take with some salt / pepper in the pan and let cool down.
Soak a rice paper in some warm water. Place the rice paper on a board or on the counter. Place 2 slices of vegan fish fingers or 2 slices of vegan meatball in the middle of the rice paper. Add a few glass noodles, paprika, shii-take, cucumber, avocado and some coriander or sprouts.
Serveer direct (door midden gesneden) of bedek de springrolls met een natte handdoek
