This recipe is brilliant. I shared this one with many people already. A few days ago I met a lady in the supermarket at the vegetarian/vegan section. It always makes me happy to see people there. I asked her what she was going to buy. She said she had no idea because there were so many options. I told her about my recipe and she took my suggestion so the vegan mince meat was in her shopping trolly in a flash. I hope they were tasty!
I make these vegan sausage rolls almost every week. They are easy and quick to make. We take them to the Efteling or we eat them for dinner with a big bowl of cosy creamy broccoli soup.They also make a great treat at parties as a snack! 6 to 7 or 12 smaller ones
400 grams of vegan minced meat or vegan minced from Naturli
6 slices of puff pastry
1 shredded union
2 squeezed cloves of garlic
handful of freshly chopped parsley
pinch of pepper
1 full tbs of minced herbs
2 tsp turmeric
3 tsp (spicy) paprika powder
½ tsp cayenne pepper
optional: 2 tbs of Arrowroot mixed with 3 tbs of water (you only have to add this if you use vegan minced meat instead of minced meat from Naturli)
unsweetened soy milk (for glazing the pastry)
Preheat the oven to 180°C/350°F.
Put the minced meat, the onion, the garlic, the parsley, the herbs and (the Arrowroot) in a bowl and knead it together. Divide the mixture over the pastry and fold it. Press the sides with a fork
(For party appetizers just cut the pastry in half, divide the mixture and fold it). Brush them with some soy milk. 25 minutes in the oven or until golden.
Ps: if you use the minced meat from naturli, you can first knead a sausage and then roll it in the pastry (and of course glaze the vegan sausage roll)
