With this vegan quinoa salad you will go fit through the summer!
The protein content of quinoa is comparable to proteins in meat. But then without the mess and animal suffering you find in meat.
Quinoa also contains minerals such as magnesium; Also for athletes such important nutrients. You do not want to get muscle cramps! So eat your magnesium. Furthermore, quinoa is rich in fiber, iron and vitamins B and E and contains unsaturated fatty acids.
Vitamin C has been shown to enhance iron absorption. It captures non-heme iron and stores it in a form that's more easily absorbed by your body.
The combination spinach and mandarin in this salad is therefore a very nice combination!

150 gram quinoa
10 cherry tomatoes
½ block Violife Greek White (or vegan greek cheese)
1 clove of garlic
1 tbs hemp seeds
200 grams of spinach
salt / pepper
1 mandarin / Clementine
2 tbs pine nuts
For the Quinoa:
Soak the quinoa for 30 minutes in water, drain and cook as on package with some salt. Drain the quinoa.
For the salad:
Peel and finely chop the garlic. Heat some olive oil in a pan and fry the garlic. Add the spinach and bake until the spinach has shrunk. Bring to taste with some salt and pepper.
Halve the avocado in the length, get rid of the pit and remove the flesh with a spoon. Cut it into cubes.
Peel the mandarin and cut the segments in half.
Cut the cherry tomatoes, the cucumber and paprika into cubes.
Cut the Vegan Greek Cheese into cubes.
In a large bowl: mix the quinoa with the veggies, mandarin, Vegan Greek cheese and a splash of olive oil. Bring to taste with some salt and pepper.
Finish with some pine nuts and hemp seeds.
