Poffertjes are a dough dish that nowadays is mainly eaten in the Netherlands. They are a kind of small pancakes, but thicker because they rise.
Traditionally a Dutch fairground tradition
Poffertjes are originally from France. At the time, Napoleon seized almost all of the flour to feed his army, creating a shortage of making hosts for the church. The poffertje was created by experimenting with a mixture of different types of flour.
They came to the Netherlands through peddlers and fairs.
The original recipe contains egg and milk. We make delicious vegan poffertjes and therefore even healthier!

30 to 40 poffertjes
400 ml of oatmilk
2 chia eggs (2 tbs chia seeds mixed with 5 tbs water. Leave this to thinken for 5 minutes before use)
16 grams of baking powder
250 grams of (spelt) flour
touch of salt
1 tsp maple syrup
Mix the baking powder with the spelt flour in a bowl and whisk the oat milk through with a whisk.
- Add the salt, the maple syrup and the chia eggs and mix everything well together.
- Grease the 'poffertjes' pan or plate and divide the batter between the dimples.
- Bake them on both sides until golden brown.
- These vegan poffertjes are delicious with vegetable butter, powdered sugar or maple syrup!
