Vegan Pizza Sandwich!

Sometimes I just crave for something that looks like a pizza with dripping melted cheese. Fortunately, I invented this crazy vegan pizza sandwich that soothes my desire like a fish for water.

Quite healthy too

I never actually buy bread other than whole-meal bread. The whole meal is ground for wholemeal flour. This contains important nutrients such as B vitamins and minerals such as iron. But also fibers that ensure a good intestinal function.

For white bread, however, usually only the inner part of the grain is used, and that consists mainly of carbohydrates and much less fiber, vitamins and proteins.

So you can eat 10 white sandwiches and dont get your knicker boxers glory! Not good for anything at all!

Serves 2


  • vegan (wholemeal) bread

  • 1 tomato, sliced

  • 2 tbs vegan pesto or homemade pesto (LINK)

  • ½ tsp Italian herbs

  • handful of pitted black olives, sliced

  • vegan grated cheese (I used Violife Mozzarella Flavor this time)

  • 1/3 Greek White Block (Violife) cut into little cubes

  1. Cut 2 thick slices of bread, cover the top with vegan pesto.
  2. Cover both slices of bread with the vegan grated cheese, Greek white cubes, tomato pieces and sprinkle with the olives and Italian herbs.
  3. 5 minutes under the oven grill until the cheese is melted or 10 minutes in the oven at 180ºC /ºC / 390ºF.
  4. Remove the sandwiches from the oven. Put them on top of eachother and cut in half.
