Your wish is my command..


A few days ago I posted a picture on Instagram with this vegan peanut butter soup. Because I just threw some ingredients together in a pan that looked delicious to me, I did not write down the recipe. But after I posted it, I had a few questions where the recipe was! Of course I am happy to share it with you.

This vegan peanut butter soup is loaded with hidden veggies, creamy coconut milk, rice. Therefore it is a real meal Soup, but it is also delish with some buttered bread.

Vegan kids favorite recipe!

When I made this soup for the first time last week, jane was happily munching it away. As she did the second time I made it. For this is the reason I am putting this soup in the category kids favorite!


Serves 4
Ingredients:

  • 500 grams of carrots

  • ½ courgette

  • 1 stalk of celery

  • 1 onion

  • 1 clove of garlic

  • 400 ml coconut milk

  • 2 tbs peanut butter

  • 1 bay leaf

  • 1 vegetable stock cube

  • 500 ml water

  • 150 gram white rice

  • fried onions

  • 2 tsp Thai Green Curry herbs (Jonnie Boer) (this is a mix of lemon grass, coriander seed, garlic, chili flocks, cayenne pepper, onion, laos, parsley, green pepper, coriander leaf and turmeric). But I think you can just use any green curry herbs in a jar which you can buy in your own local supermarket.

  • coconut oil or olive oil


Peel the onion and the garlic and chop them. Put some oil in a soup pan and bake the onion and the garlic on a low heat. Chop the carrots, the celery stalk and the courgette and add these into the pan.

Add the Thai Green Curry herbs, salt and pepper and bake this for one minute, stirring in the pan. Now the vegetable stock cube can go in, the water and the coconut milk. Stir and add the rice, the peanut butter and the bay leaf.

Bring to a boil and let this cook on a low heat for 15 minutes. Occasionally stir so the rice doesn't stick to the bottom of the pan.

After 15 minutes, take the bay leaf out and puree the soup. Serve with some fried onions and for the grown ups some peanuts.

Ps: if you want the soup to be more firm (so it is more easy to eat for children) you just change the amount of rice in 200 gram.
