Lovely with a bowl of soup
I like the salty, cheesy taste of pesto. Especially on buns together with a big bowl of soup this makes a lovely meal!
A cosy combination with my recipe for creamy mushroomsoup or vegan paprika soup ! They look so cosy on the table these lovely Italian buns with vegan pesto, vegan grated mozzarella, pine nuts and some loose basil leaves.
2 cups fresh basil leaf
4 garlic cloves
50 gram cashews
20 gram pine nuts
3 tbs nutritional yeast
3 tbs water
5 tbs olive oil
optional: vegan mozzarella, Italian herbs and some extra pine nuts
In a food processor, finely chop basil, garlic, cashews, pine nuts and the nutritional yeast. Slowly drizzle in the water and the olive oil (Use amount that will make to desired consistency). Add sea salt to taste.
For the buns: Slice some Italian bread. Now generously spread the slices with some homemade pesto. Sprinkle some vegan mozzarella on top and some Italian herbs. Wack them in the oven for a couple of minutes (or under a grill) and serve them with some pine nuts and fresh basil.
