A tasty plate of comfort food on the table in 10 minutes!
This vegan pasta with mushrooms came about when I had some mushrooms left in my fridge and I also had packets of pasta. (I always have pasta in stock for the days that I have little time to cook).
So I didn't have much time. This vegan pasta with mushrooms makes a delicious plate of vegan comfort food on the table in 10 minutes! Super creamy!
By using whole-grain pasta in this recipe, the pasta is also nice and high in fiber and low in sugars.
1 clove of garlic
250 grams of mushrooms
100 grams of shii takes (mushrooms)
4 handful of spinach
250 ml plant based cream (I use soy)
salt / pepper / fresh Italian herbs (oregano, thyme, rosemary) or just out of a jar
500 grams of linguine integrali (Albert Heijn) or any other vegan pasta
Heat some olive oil in a pan. Shred the onion and squeeze the garlic in. Bake this on a medium heat. Add the mushrooms and shii takes. Flavor with the herbs, salt and pepper.
Now add the spinach. Bake until the spinach shrinks. Add the cream. Put it on a low heat. Let it cook for a couple of minutes.
Cook the pasta in water and drain.
Turn the heat down and add the sauce to the cooked pasta. Mix everything well.
