A tasty plate of comfort food on the table in 10 minutes!

This vegan pasta with mushrooms came about when I had some mushrooms left in my fridge and I also had packets of pasta. (I always have pasta in stock for the days that I have little time to cook).

So I didn't have much time. This vegan pasta with mushrooms makes a delicious plate of vegan comfort food on the table in 10 minutes! Super creamy!

By using whole-grain pasta in this recipe, the pasta is also nice and high in fiber and low in sugars.


Serves 2 to 3

Ingredients:

  • 1 onion

  • 1 clove of garlic

  • 250 grams of mushrooms

  • 100 grams of shii takes (mushrooms)

  • 4 handful of spinach

  • 250 ml plantbased soy cream (light)

  • 200 grams of falafel balls
  • salt / pepper / fresh Italian herbs (oregano, thyme, rosemary) or just out of a jar

  • olive oil

  • 200 / 250 grams of vegan pasta


Heat some olive oil in a frying pan. Chop the onion and squeeze the garlic. Fry this in the pan over medium heat. Add the mushrooms and shii takes. Season with the herbs and salt / pepper. Cut the balls in half and add. Bake it.

Now add the spinach. Bake until the spinach shrinks. Add the cream. Put it on a low heat. Let it cook for a couple of minutes.

Cook the pasta in water and drain.

Turn the heat down and add the sauce to the cooked pasta. Mix everything well.
