A fit bird
I love to eat a big bowl of lentil meal salad in summer. Just, because I love a cold salad when it is hot outside but also because it is great for your health and body.
For your body?
Yes. Lentils are legumes. They are incredibly rich in fibers and protein. Lentils ensure good digestion. By eating lentils I reduce the chance of irritable bowel syndrome and that makes me very happy!
A glass of red wine, sunset. Picture perfect right?
can of red lentils (310 grams)
4 tbs olive oil extra vierge
1 tbs (vegan) white wine vinegar
1 tbs French mustard
1 grilled red pepper (out of a jar)
pack (200 gram) vegan blue cheese (I use Vegan Blue French Style from Veggiedeli)
½ jar sun dried tomatoes
handful (garlic) olives
200 grams of spinach
salt / pepper
Optional for some extra creamy sweet dressing:
soy yogurt mixed with agave syrup
Make the dressing:
Mix the olive oil, vinegar and mustard. Bring to flavor with some salt and pepper.
Finely chop the shallot and add to the dressing.
For the salad:
Drain the can of lentils and add them to the dressing. Cut the cucumber, cherry tomatoes, grilled pepper and sun dried tomatoes and add them to the lentils. Add the spinach as well. Mix everything together.
Cut the vegan blue cheese into cubes and divide over the salad. Also the olives, cashew nuts, sunflower seeds can go in. Mix everything together.
Serve with some extra soy yogurt agave syrup dressing!
