Now I can't tell anybody what chicken tastes like because I don't eat meat since I was a little girl. But I made this salad and let my (some still meat eating) acquaintances taste this vegan chicken salad and apparently it comes close. The structure, the taste. I believe that, with the right herbs and structure, you can almost veganize everything. Make a lunch sandwich with this creamy vegan chicken salad or wack it on a cracker. It will be much appreciated on the snack board this animal friendly salad!

Ingredients:

  • vegan chickenstyle pieces

  • 2 tbs curry powder

  • 1 shallot

  • ½ tsp kurkuma

  • ¼ tsp chili powder or chili flakes

  • ½ tsp paprika

  • a pinch of ginger powder

  • salt / pepper

  • 2 tsp Alpro Soy yogurt

  • 1 full tbs Vegan mayonnaise

  • juice of ½ mandarin

  • coconut oil (for baking)


Melt the coconut oil in a pan and bake the chickenstyle pieces on a medium heat together with the curry powder, kurkuma, chili powder, salt, pepper and paprika.

In a bowl: mix the yogurt, mayonnaise, ginger powder, 1 tsp curry powder. Cut the shallot very fine and add to the mixture. Now add the chickenstyle pieces and the juice of the mandarin. Mix everything together. Add some salt and pepper to taste.
