In many of my recipes you find a touch of my love for England like you see in this recipe for vegan jam tarts. You can find these cute little tarts in most of the (nostalgic) bakery's in England. Unfortunately most of the time they are not vegan. I veganized the recipe!
An idyllic vegan British picnic
These British vegan jamtarts taste fantastic and are very easy to make. Fill the tarts with a splash of your favorite jam (last week I made this super healthy raspberry jam),and eat them while having a picnic, high tea or just as a little treat with a glass of fresh orange juice!
12 jam tarts
mini tart pan
175 gram of plant based butter
80 grams of caster sugar
200 grams of flour
a little bit cold water
vegan baking spray to grease the tart pan
Mix the butter, sugar, flour and a pinch of salt (in a food processor or by hand). Add some cold water if necessary.
Cut the dough in two and wrap it in clingfilm. Pop into the fridge for one hour.
Preheat the oven to 180°C/ºF. Grease the tart pan.
Dust a clean surface and rolling pin with flour and roll out the pastry until it is 0.5 cm thick. Cut out rounds of pastry with a cooking ring or a glass and push them into the wells of the tart pan so they come up the sides.
Now add a teaspoon of jam into each jam tart.
15 minutes in the oven or until the pastry is golden and the filling is thick and bubbling.
Remove from the oven and let the mini tart pan cool down for a couple of minutes before you take them out.
