The cousin of the Dutch meatball
A Meatloaf is a traditional German, Scandinavian and Belgian dish, and it is a cousin of the Dutch meatball. I veganized it and gave it a Thai twist by adding curry paste.
This vegan meatloaf is great to eat straight out of the box, on a buffet table or with veggie chips!
700 gram of vegan minced (I use Naturli)
2 tbs Thai red curry paste
3 spring onions, sliced
4 slices of vegan whole grain bread
50 ml soy milk
½ tsp salt
1 tbs grounded flaxseed mixed with 3 tbs water. (Let the mixture rest until thickened and add to your dish).
Preheat the oven to 180°C/350ºF.
- Line the loaf tin with baking paper.
- Cut the crusts of the bread and soak the bread in the soy milk. Squeeze the milk out and mix the bread with the spring onions, flaxseed mixture, curry paste, salt and the minced.
- Scrape into the loaf tin and bake in the middle of the oven for 40 minutes.
Eat this vegan meatloaf with some baked potatoes or make this vegan meatloaf burger !
