Easy to make vegan falafel wraps...
These wraps contain everything you need: fibers, proteins, the right fats and vitamins.
You will have these easy-to-use vegan falafel wraps on the table in no time. Make them in advance, roll them in some foil and store in the fridge for later, take them on the road, for lunch at work or put all the ingredients on the table and have a falafel wraps party!
Why do it difficult when it can be easy?
½ red point pepper
1/3 zucchini (courgette)
10 black olives
200 grams of vegan falafel (without egg)
50 grams of hummus (homemade? Check this hummus for example)
2 large whole-grain wraps
hand of spinach
½ avocado in cubes
¼ red cabbage, sliced
4 tbsp soy yogurt
1 clove of garlic
salt / pepper to taste
1 tbs lemon juice
Finely chop the bell pepper, zucchini, shallot and olives. Put in a bowl and mix with the hummus
Make a mixture of the soy yogurt, salt / pepper, squeezed garlic and lemon juice and add the mixture to the hummus mix
Bake the falafel according to packaging
Prepare a wrap and spread some spinach on top. Divide some hummus mix over it, falafel, red cabbage and avocado. Roll up and cut in half.
