I made this vegan egg salad last Easter. I wanted to make this salad again but I couldn't find the recipe on my blog! Thank heavens I found out that I shared the recipe with you guys on my Instagram.
a few months ago. Now I did write down the recipe on my blog because how handy is it that I can just find all my favorite recipes online!
1 block tofu (375 grams)
2 tbs vegan mayonnaise
1 tsp curry powder
1 tsp turmeric
½ tsp spicy paprika powder
1 tsp yon mustard
a few stems of chives
a pinch of kala namak (or more to taste)
salt / pepper
a splash of hot sauce (Sriracha for example)
Drain the tofu. Put the tofu in a colander on a bowl and put something heavy on it (a melon or something). Leave this to drain for 30 minutes.
Meanwhile finely cut the shallot. Put these in a bowl together with the vegan mayo, curry powder, turmeric, paprika powder, mustard, hot sauce, salt / pepper to taste and the kala namak. Cut the chives and add to the bowl.
Take the weight off the tofu and break the tofu with your hands. Put it in the bowl with the other ingredients. Mix everything together. Add some extra kala namak to taste.
This vegan egg salad is so good on a cracker!
