Asparagus, a natural botox!

Why am I so fond of this asparagus meal? Asparagus is rich in the fiber inulin and rejuvenates the skin! The Egyptians knew the benefits of asparagus centuries ago and called this fantastic vegetable the "white gold".

Asparagus also has a beneficial effect on the liver and kidneys. They have a diuretic effect and contain few calories (20 kcal per 100 grams).

From mid-April to the end of June it is time for asparagus time for a delicious seasonal recipe! This vegan asparagus meal recipe is super healthy and super yummy!


Serves 4

Ingredients:

  1. Boil the jacket potatoes in plenty of water. Drain, shake the pan once and let it cool down until you can grip it. Heat some olive oil in a frying pan, cut the potatoes into slices and divide the slices in the frying pan. Sprinkle with some paprika, Italian herbs and salt. Cook on medium heat for about 10 minutes on one side. Then turn them over with a fork.
  2. Boil the asparagus for about 10 minutes in plenty of water with a little salt. Drain the asparagus in a colander.
  3. Divide the asparagus, vegan ham and vegan egg salad over 4 plates. Serve with the baked potatoes and chives. Enjoy this vegan asparagus meal!
