Wat gaan we op zondag doen als het pijpenstelen regent? Lekker bakken met onze dochter natuurlijk. En wel een vegan appelbol! Toch nog redelijk gezond ook 😉.
An 'appelbol' is an old fashioned sweet pastry we make in Holland and Belgium. We eat this with a nice cup of coffee or tea. However, when you buy this at a local baker they are most of the time made out of dairy butter and covered with egg. Not very vegan right?
On this drizzly day we make nice vegan (appelbollen) apple pastries. In short, this is enjoyment!
3 (Elstar) or sweet apples
3 slices of vegan puff pastry
handful of raisins
1 tsp cinnamon powder mixed with 1 tsp (cane) sugar
3 tbs maple syrup
juice of half a lemon
20 gram marzipan
soy milk for glazing the pastry
Preheat the oven to 200°C/400°ºC / 390ºF.
Defrost the pastry and roll them out a little bit with a rolling pin so the apple will fit in. Peal the apples, hollow them out and rub them in with the lemon juice. (I hollow them with an apple drill).
Put the pastry on an oven plate covered with baking paper.
Put an apple on every pastry. Fill the hole with some raisins and poor in the maple syrup. Finish with some marzipan.
Now fold the pastry around the apple and turn the apples upside down. Glaze them with the soy milk and sprinkle them with some cinnamon sugar.
25/30 in the oven until golden.
