Do you know the Dutch commercial from Koopmans where children are cycling with their grandpa over the Dutch Dikes and they smell the scent of freshly baked apple pie coming towards them?

Helaas worden hier eieren, melk en roomboter in gebruikt. Iets wat wij natuurlijk niet willen! Ons huis ruikt na het bakken van mijn recept voor vegan appel bananencake ook heerlijk naar appel en warme noten. Niet alleen ons huis trouwens want de buurman kwam laatst ook nieuwsgierig over de schutting hangen 😉

This bread is made easy as pie and still so lovely!

Ingredients:

  • 1 tsp baking powder

  • 1 cup of whole wheat flour

  • 1 cup of coconut flour

  • ¼ tsp salt

  • 1 tbs cinnamon powder

  • 1 cup unsalted mixed nuts

  • ½ cup raisins

  • 350 grams of (vegan) apple sauce 0% added sugar

  • 3 tsp coconut blossom sugar
  • 3 ripe bananas squashed and 1 extra for the topping of the cake

  • 50 grams melted coconut oil or some other melted vegetable butter

  • 1 tsp vanilla extract

  • 1 flax egg: 1 tbs flaxseed mixed with 2.5 tbs water. (let rest for 5 minutes to thicken)

  1. Preheat the oven to 180º.
  2. Put all the dry ingredients in a seperate bowl and mix well.
  3. Put all the wet ingredients in a seperate bowl and mix well.
  4. Now mix the wet ingredients with the dry ingredients.
  5. Grease the spring form. Put the mixture in the spring form. Divide evenly. Halve the banana and divide over the top of the cake tin.
  6. Put the apple banana bread 50 / 60 minutes in the oven.
