Homemade tomato tapenade is the best!

I like a good homemade tapenade. When I have a drink somewhere, this is usually an option in a restaurant or pub in The Netherlands that is often vegan (with a baguette).

You can of course make tapenade in all kinds of ways (with different types of olives and herbs, for example). I made a tomato tapenade with sun dried tomatoes. This is really my favorite!

Ingredients:

  • can of black olives, pitted, in water (drained 115 grams)

  • 10 sun dried tomatoes (in oil)

  • 1 tbs olive oil (extra virgin)

  • 1 tbs pine nuts

  • 1 clove of garlic

  • 2 sprigs of fresh oregano

  • a touch of fresh pepper

Put the ingredients in the food processor and mix everything with a chopping knife.

Delicious on a cracker with lunch or on a snackboard.
