A protein bomb

I am a very active swimmer. Well, at least on Thursday's I am for one hour. After one hour of intense borst crawl I am in desperate need of a protein bomb. I always liked to bake some eggs but of course I had to find an alternative now that I am vegan.

This recipe for vegan scrambled egg is spot on in this house. (Tofu is very high in protein). This one that I use is 13 grams protein/100 gram. It is very easy and quick to make and it will give you your knickerboxer glory!

I think the combination of Kala Namak, nutritional yeast, tofu and veggies is the best thing since sliced bread! The chickens will be grateful..

Serves 2 to 3

  • 375 grams of tofu
  • 1 onion

  • 1 clove of garlic

  • 1 tsp turmeric

  • 1/2 tsp cayenne pepper
  • 1/2 tsp Italian herbs
  • 1 tsp olive oil
  • 4 tomatoes

  • 250 grams of mushrooms
  • 1 handful of spinach

  • salt / pepper

  • 1 pinch of kala namak

  • 2 hard buns

  • jar of Vegan pesto genovese

  • optional: nutritional yeast

  • optional: lettuce


Put the olive oil in a frying pan. Chop the onion and squeeze the garlic in the pan. Slice the mushrooms and fry.

Chop the tomatoes into pieces and fry along with the spinach. Drain the tofu and break into pieces. Add to the pan. Now add the turmeric, Italian spices and cayenne pepper. Bake on high heat for 5 minutes. Stir well.

Spread the sandwiches with vegan pesto.

Remove the scrambled tofu from the pan and decorate on the sandwiches. Add a pinch of kala namak to each bun and sprinkle some nutritional yeast flakes over it.

    Vanmorgen gemaakt en met zn drieën van zitten smullen. Goed idee met de tomaat en spinazie.
