Vegan swamp soup?
This picture kind of reminds me of a swamp. Am I right? I don't know what got into my camera today but it was not in the mood I am sure!
Hey Popey, are you going to seduce your Olive with this soup?
450 gram fresh spinach
2 cloves of garlic
2 vegetable stock cubes (vegan)
1 tsp dried Italian herbs or some fresh oregano, rosemary and thyme for example
1 half red jalapeño
200 ml soy cream
salt / pepper to taste
1 liter water
vegan salmon from 'SoFine'
freshly chopped dill
slice of lemon
Put some olive oil in a soup pan. Shred the onion, squeeze the garlic and chop the jalapeño. Bake this on a low heat. Add some salt and pepper. Now add the spinach and let it shrink while you scoop.
Now add the water, vegetable stock cubes, herbs and the soy cream. Turn up the heat and bring to a boil. Cook for 5 to 10 minutes.
Optional: Meanwhile bake the vegan salmon in a frying pan as on package.
Take the soup pan of the stove and mix the soup with a blender. Serve with the vegan salmon, a slice of lemon and some chopped dill!
