When I am eating alone with Jane and I want to have something quick but healthy to eat on the table I often make this super easy creamy vegan pasta sauce. We adore this pasta sauce together. Very comfy to eat in front of the television. I often buy freshly made pasta in the supermarket stuffed with chickpeas and lentils. Yummy!
Nutritional yeast what?
In this recipe I use Nutritional yeast. These flakes have a cheesy flavor. I just buy this can at the local supermarket. I never heard about this before I went vegan. Did not know it existed. Now I really can't live without it in my kitchen! I do think you have to heat up nutritional yeast for a brief moment because then the taste comes into its own.
1 clove of garlic
4 handful of spinach
200 ml plant based cream (I use soy)
salt / pepper / fresh Italian herbs (oregano, thyme, rosemary) or just out of a jar
1 full tbs nutritional yeast
Heat some olive oil in a pan. Shred the onion and squeeze the garlic in. Bake this on a medium heat. Flavor with the herbs, salt and pepper.
Now add the spinach. Bake until the spinach shrinks. Add the cream. Put it on a low heat. Let it cook for a couple of minutes.
Add the nutritional yeast and stir it in the pan. Turn the heat down and add the sauce to the cooked pasta.
Serve with some extra nutritional yeast, black olives or basil.
