Jackfruit. I never really heard about it until I became vegan and I saw all kinds of recipes flashing by for pulled jackfruit. I became very curious about this meat substitute.

Jackfruit: the 'ultimate' meat substitute

This fruit is phrased as a meat substitute because of it's structure. It tastes and looks a lot like 'pulled pork' or 'pulled chicken'. The name. Af if! It gives me goosebumps.

Choose the right kind of jackfruit

If you are going to buy jackfruit in the supermarket you can choose out of 2 kinds of cans. Namely the yellow jackfruit and young green jackfruit. Ripe jackfruit is yellow, sweet and very suitable for making desserts. Young jackfruit does not have much taste and has a fleshy texture.

You will need the green young variant for this recipe.

Serves 2


  • can, 280 gram (drained weight) Young Green Jackfruit

  • 1 onion

  • 1 clove of garlic

  • 1 tbs brown sugar

  • 1 tsp cumin seeds

  • 1 tsp paprika powder

  • 1/2 tsp cayenne pepper

  • 1/3 vegetable stock cube dissolved in 100 ml water

  • 4 tbs vegan bbq sauce

  • salt / pepper to taste

  • 2 vegan buns

  • oprional: pickle, carrot, vegan sauce

Drain the jackfruit. Shred the Jackfruit with your hands. Remove the hard parts and throw these away. Rinse the jackfruit with water.

Marinate with the brown sugar, cumin seeds, paprika powder and the cayenne pepper.

Peel and shred the onion. Squeeze the garlic and bake this on a low heat for a couple of minutes. Add the jackfruit and bake for another 5 minutes on a medium heat. Add the bbq sauce and the vegetable stock and cook this for 15 minutes on a low heat. Add salt and pepper to your taste.

Serve on a hard bun or baguette with some pickles, carrot and a lovely vegan sauce. I use vegan Aioli from Bedda.

    Hai! Mag ik vragen waarom je de harde stukjes weg gooit? Je leest het in veel recepten, maar onder het mom van no waste lijkt het mij heel erg zonde en het is gewoon eetbaar toch?

      Hoi meid. T gaat hier echt om misschien 4 kleine harde stukjes. Als je de harde stukjes erin laat dan verpest het de sappige structuur vind ik..maar ieder z’n ding natuurlijk!
