Pastry, I love it. Sweet or savory. It is always a surprise what kind of stuffing it contains. These vegan mini courgette quiches are a really creamy comfort food. They are nice,hot or cold, but I like them the most when they are lukewarm. I found out when I made the quiches for one of the photoshoots for the website. We ate them in a meadow when they were lukewarm but still crispy.

Serves 6


  • 6 slices of puff pastry

  • ½ courgette cut into small cubes

  • 6 tbs soy cream (diet)

  • 2 cloves of garlic, finely cut

  • 100 gram of grated vegan cheese

  • Italian herbs, pepper, salt

  • 2 tbs Arrowroot combined with 3 tbs water

  • 2 tbs pine nuts
  • extra: greased muffin tin

Preheat the oven to 200º.

Defrost the pastry. Line the muffin tin with the pastry. With other words make some kind of cups. Divide the courgette cubes over the pastry cups. Make a mixture of the cream, garlic, cheese and the herbs. Mix the Arrowroot with the water and add to the mixture. Stir well. Now add the mixture on top of the courgette. Bake the quiches in the oven for 25 minutes until golden.

    is de Arrowroot ook te vervangen door ?

      IK gebruik eigenlijk altijd Arrowroot in mijn hartige taart recepten omdat het vrijwel smaakloos is maar een chia ei (1 el chia zaadjes in 2.5 el water. 5 minuten laten indikken) zou ook kunnen. Dit bindt ook. Of een lijnzaad ei..
