I always start my week with exercising and this proteinbomb soup. There is only health to find in this protein lentilsoup so I love starting our week with this. Especially after Sunday's because then we eat chips. My acquaintances know this soup as 'sportsoup or weight loss soup'. I love making a large pan of this so we have some leftovers for Tuesday. Easy and healthy. If you still crave for some carbs you can add a baguette with vegan pesto, a delish combination. A feel good soup, I hope your week is off to a great start!
1 onion chopped
1 clove of garlic crushed
3 stalks of celery chopped
1 chopped carrot
1 can of chopped tomatoes
2 vegetable stock cubes
200 gram dried red lentils (or 300 if you don't use quinoa)
100 gram quinoa
1.5 / 2 liter water
1 tsp dried mint
1 tsp cayenne pepper
salt / pepper
optional: chopped coriander or fresh mint leaves
optional: vegan pesto and baguettes
Put a large soup pan on a low heat and add a splash of oil. Put the garlic and onion in the pan and cook for a few minutes. Now add all the other veggies and add the herbs. Cook them for 10 minutes. Add the chopped tomato can, lentils (and the quinoa). Add the water and the vegetable tablets. Bring the soup to a boil and let this all cook for 15 to 20 minutes on a low heat. Stir occasionally. You can serve this soup with some coriander or fresh mint leaves.
Ps: you can add almost any vegetables you want in this soup. I always take a look at what I have left in the fridge like spinach, mushrooms, green beans or sweet potato.
