French onion soup is a real comfort food in my opinion. Well...most of the time. A long time ago I went to Paris with some friends and we were peckish but had to catch the train back to Disney soon. We ended up in a smudgy restaurant next to the train station and I ordered a real French onion soup. That same night I had a tour du loo in the Kyriad hotel in Disney.
Noooo Lin, don't spoil my appetite! Yes Yes I know but I assure you that my recipe for French onion soup will give you a tour du heaven. Really la perfection in a oven bowl!
400 gram onions
1 large red onion
1 sweet onion
2 vegan vegetable stock cubes
1 tbs white wine vinegar (Vegan)
2 tbs olive oil
10 gram vegetable butter
My favorite vegan grated cheese (Mature Cheddar Style, Veggiedeli)
Melt the butter in a pan and add the oil. Cut the onions in rings and bake them on a medium heat for 20 minutes with some salt and pepper, chopped rosemary and the bay leaf. After 20 minutes turn the heat up and bake the onions for another 10 minutes until brown.
Bring 1 liter of water to a boil in a cooker. Poor the water in a measuring cup and add the vegetable stock cubes. Add this to the onions together with the cloves and the white wine vinegar.
Preheat the oven to 200°C/400°F (or rather the grill). Remove the bay leaf and the cloves. Divide the onion soup in oven-proof bowls. Slice the bread and lay them on top of the soup. Finish with some vegan grated cheese and put them in the oven until the cheese is melted.
Ps: the secret of making the perfect onion soup is using different kind of onions, bake them really brown and eat it the day after! The next day: Just heat up the soup in the pan, pour in oven-proof bowls, add the baguette and finish the topping with some vegan grated cheese!
