I am so ashamed. When I was a little girl it was perfectly normal to celebrate your birthday at Burger King or Mc Donalds. As I remember I was really struggling not eating that hamburger from my happy meal. Actually really stupid because I think it was all about that soggy bread and those 2 sad pickels. Now I can put as many pickles on my Vegan burger as I want so take a look at this beauty, This is what I call a 'happy meal!'

Serves 2

  • 2 of your favorite burgers (I use Vegafit burgers)

  • lettuce

  • 1 tomato

  • 1/4 cucumber

  • 3 sundried tomatoes
  • coconut oil (for baking)

  • 1 carrot

  • (Alpro) Soy yoghurt

  • 1 tbs vegan mayo

  • salt / pepper / curry powder

  • 1 fat gherkin

  • 1 clove of garlic

  • 2 bagels

  • ½ avocado

  • some lemon juice

  • 2 plakjes vegan kaasplakken

 


Method:

 

Make a sauce with the Soy Yoghurt and the mayo. Add some salt / pepper and curry powder. Grate the carrot, press the garlic and add this to your sauce. Mix everything together. Set aside.

Cut the cucumber, tomato and the gherkins in thin slices

Mash the avocado, add some lemon juice, salt / pepper. Set aside.

Bake the burgers in some coconut oil. Add a slice of vegan cheese on top of the burger and put a lid on the pan. Bake one more minute until the cheese starts melting

Now cut open the bagels. Add the sauce to the bagel base, then top with the cheesy burger, the tomatoes, cucumber, gherkins and sundried tomatoes. Rub the bagel top with a spoon of avocado. Now gently press together.
