Lovely oldfashioned Dutch kale and mash. Totally go for it now because the frost is over it my mum always says. (is that proper English or am I talking foolish now) I think this is a real comfort food but you know, I find that very easy to say when there is potato mash involved. Super easy and fast to make. Now the vegan Roockworst is available in our supermarket it becomes a real treat to eat this! I love buying a whole cale and then cut them myself in a food processor because I believe it makes the flavor more intense but obviously this is more work. Did you know kale is actually a superfood? Serves 4

  • 500 grams of chopped kale

  • 1.5 kg of floury potatoes

  • 1 onion

  • soy milk

  • lump of vegan butter

  • salt / pepper / nutmeg

  • 2 packs of vegan 'rookworst' (smoked sausage) (Albert Heijn)

Put a large pan on a medium heat. Put the kale in. Add 4 tbs of salt and stir the kale until it is shrunk. Turn the heat a little bit lower.

Now wash the potatoes. (I never peel the potatoes because I feel like I am peeling off all the vitamines then. But the choice is up to you.) Cut the potatoes and lay them on top of the kale. Chop the onion and sprinkle it on the potatoes. Now add 1/2 pint of water. Put the lid on the pan and cook until the potatoes are done. Drain the potato and kale.

Add the lump of butter and add some soy milk. Mash this and add more soy milk until you get a nice and creamy mash. Add some salt. Pepper and nutmeg.


Ps: I always bake the kale in a pan with some butter so it get's a nice crust. Then I serve it in the pan with a few chopped 'rookworst'. This is so delish with some vegan gravy and some spicy mustard.
