A potato surprise package...

These potato mushroom cakes are delicious! I think potato is the ultimate vegan comfort food and the healthy filling in these cakes also makes them extra healthy!

Eat them with, for example, with this healthy carrot salad!

Earlier I shared with you that I never peel potatoes because then you get the most nutrients from it. Most nutrients are under the skin! Get the black dots out because they are toxic!

Serves 2


  • 1 kg potatoes (for mash)

  • ¾ cup of flour

  • salt / pepper to taste


  • 250 grams of mushrooms

  • 1 onion

  • 1 clove of garlic

  • handful of spinach

  • herbs: a few dill sprigs, sage, twig of oregano

  • sunflower oil

  • 1 tbs lemon juice

  • salt / pepper to taste

  1. Cut the potatoes and cook them in a large pan in water with some salt. Drain them, mash and season well with salt / pepper/ Leave to cool.
  2. Heat some oil in a frying pan, shred the onion and sauté for about 5 minutes. Squeeze in the garlic, cut the mushrooms very finely and add them to the pan. Cook for about 10 minutes until the mushrooms are soft. Add the spinach, lemon juice, salt / pepper and the herbs. Bake until the spinach has shrunken. Take the pan of the heat and let the mixture cool down.
  3. Mix the flour into the mashed potatoes and mix well.
  4. Take a couple of tbs of the dough and flatten them out into patties. Add about a tbs of mushroom mixture in the middle and top with some extra potato mixture. Shape into round potato cakes. Put the cakes on a plate (make 5 to 6).
  5. Put some sunflower oil in a frying pan and put the pan on high heat. When the oil is hot (test with a piece of bread), bake the potato cakes on both sides for about 5 minutes until they are nicely golden!
